Sun Dried Tomato Dip

Hi, just finished making a healthy sun dried tomato dip.

I didn’t follow any particular recipe, just soaked some cashews overnight and had some crackers that were screaming out for some dip. Subsequently I went to the pantry and grabbed some ingredients.

First I drained and let the cashews sit for a bit in the strainer and then threw them in the food processor. To this I added some lemon juice, salt, pepper and a few semi sun-dried tomatoes with garlic and herbs and processed it to a smooth consistency.  After a first tasting  I then adjusted the taste by adding more tomato and pepper.

It must have been a success as everyone in the house liked it. Sorry about the plastic container, not very organic I’m afraid. Note to self, next time use a fancy glass container 🙂
